What is Ultra High Carbon Steel?
For those who value edge retention and precision, many Roselli classics are also available in Ultra High Carbon Steel, or UHC.
Roselli UHC is hardened to approximately 64 HRC. The harder steel helps the blade retain a sharp edge for longer, making it particularly well suited to precise cutting work.
Premium Carbon Steel or UHC?
Choose Premium Carbon Steel when you want a tough all-round knife that is easier to sharpen and better suited to harder outdoor work.
Choose UHC when edge retention and precision are your priorities and you are prepared to treat the blade with a little more care.
Because UHC is harder, it is also less forgiving of side forces and contact with hard materials such as bone. For demanding work where toughness is the priority, Premium Carbon Steel is the better choice.
